Christmas raviolis - the best we ever made!
Every year at Christmas Eve we boys make raviolis. Green ones, spinach ones. Filled with ricotta (no meat! That's for peasants or something). Raviolis need ricotta. This is the rule, okay?
Now, the fun thing is, there are now three of us on the job, instead of only Maxime and me, as it used to be.
However, I need to make sure there are strict turns at the crank handle, since both Gabriel and Maxime want to man it at all times. So, one does one pasta strip, then I switch to the other labrorer.
It is not as easy to make it as it might appear. I mean, sure, one can "make" them, but the texture and consistency of these homemades is all-important. So, if you "bully" the pasta too much -- putting it through too fine a roller "number" too soon" -- it will damage the final effect.
This year, I believe we really got it down, thanks to Maxime's excellent memory of what we did last year, and what we said we wanted to do differently this year.
They came out so delicious !
